Cape Byron Distillery

OCTOBER

Nestled in the lush subtropical rainforest of Byron Bay, Cape Byron Distillery blends Scottish whisky heritage with Australian innovation.

Co‑founded by master distiller Jim McEwan and Eddie Brook, they use malted barley sourced via Stone & Wood and distil using double copper pot stills (“George” and “Micko”). The lush rainforest environment, coastal sea breeze, and humid conditions impart a unique character to their spirit as it matures in ex‑bourbon American oak, Chardonnay, Viognier, and other wine and fortified casks.

Their signature expression, The Original, delivers soft vanilla, crème brûlée and buttery macadamia layered over pear and coconut, echoing the Byron hinterland terroir in every sip.
