The Gold Coast gets a lot right. The beaches are world-class. The weather is genuinely unfair. But if you’ve already done the theme parks and you’re looking for something a bit more interesting, a bit more adult, and a lot more worth talking about afterwards - you’ve come to the right place.
Here are ten Gold Coast experiences that trade the queues and ride photos for something you’ll actually remember. Some are unmistakably local, some are genuinely one-of-a-kind, and one of them involves learning to make cocktails from a sixth-generation distiller. We’ll let you guess which one we’re most excited about.
1. Take a Cocktail Class at a Real Craft Distillery
Every Sunday at 1PM, Six-Tricks Distilling Co. in Mermaid Beach opens its bar to people who want to learn the craft behind the cocktail. Not a staged experience with pre-mixed bottles and a laminated card — a genuine, hands-on cocktail masterclass run in a working distillery, using spirits made on the premises.
Over two hours you’ll tour the distillery, make two cocktails, taste spirits distilled right there in front of you, and leave with the recipes, the skills, and probably a new favourite drink. It’s $79 per person, requires no experience, and books out regularly — so plan ahead.
It also happens to be the best gift you can buy someone who thinks they’ve already done everything on the Gold Coast. Spoiler: they haven’t.
2. Do a Distillery Tour and Tasting
Six-Tricks is the Gold Coast’s only full-spectrum craft distillery — meaning they make all six core spirit types in-house: rum, whisky, vodka, gin, agave and brandy. The Distillery Tour and Tasting takes you behind the scenes into the production space, where the team walks you through the process.
You’ll taste straight from the source, learn how the spirits are made, and leave with a much better answer to the question “so what did you do on the Gold Coast?” Tours run Thursday, Friday and Sunday — bookable online.
3. Catch a Sunrise at Burleigh Heads National Park
Burleigh Heads is one of those places that earns its reputation. The national park walk takes about 30 minutes along the headland, with views that stretch from Coolangatta to the skyline. Early morning is genuinely spectacular.
Pair it with breakfast at one of the James Street cafes afterward and you’ve had a perfect Gold Coast morning for about the price of a coffee.
4. Eat Your Way Through Miami Marketta
Miami Marketta is the Gold Coast’s original street food market — operating every Wednesday, Friday and Saturday night in Miami. Think 30+ food vendors, live music, string lights, and the kind of communal eating experience that makes a great night out even without a plan.
It’s a legitimate Gold Coast institution and one of those places that genuinely delivers for every group type — couples, families, visitors, locals.
5. Hire a Paddleboard on the Broadwater
The Broadwater at Southport is calm, flat, and genuinely beautiful from water level. Paddleboard hire is easy to find along the foreshore, and a morning or afternoon on the water gives you a perspective of the Gold Coast that most visitors never see.
No experience needed. Wetsuits available in winter. Significantly less crowded than the surf beaches.
6. Book a Private Whisky Tasting
If the cocktail class is the approachable introduction, the Gold Coast Whisky Club is where things get serious. Monthly events for genuine whisky enthusiasts — guided tastings, rare pours, and access to spirits that don’t make it to the general bar list.
For something even more exclusive, the Private Cask programme lets you own your own barrel, ageing in the Founders Cask Lounge.
7. Explore the Hinterland
Most people fly into the Gold Coast and never make it past the beach strip. That’s their loss. The hinterland — Tamborine Mountain, Springbrook, and the Lamington National Park in particular — is extraordinary. Rainforest walks, waterfalls, glow worm caves, and views that go all the way to the coast.
Tamborine Mountain is about 45 minutes from Mermaid Beach and makes an excellent full-day trip. Gallery Walk has good food and wine. The night glow worm tour at Natural Bridge is one of the more quietly spectacular things you can do in Queensland.
8. Watch a Game at Cbus Super Stadium
The Gold Coast Titans play home games at Cbus Super Stadium in Robina — a proper NRL stadium that’s loud, well-run, and a great live sport experience for visitors and locals alike. The atmosphere is genuinely good, tickets are accessible, and it’s a solid night out even if you’re not a rugby league devotee.
Check the season schedule and book early for big-match weekends.
9. Take a Whale Watching Cruise (June to November)
The Gold Coast sits directly on the humpback whale migration route, and between June and November the numbers are genuinely extraordinary. Multiple operators run daily cruises from the Broadwater and Southport, and sightings rates are among the highest on the east coast.
If you’re visiting in the winter months, this is a non-negotiable. A morning cruise followed by an afternoon at Six-Tricks makes for an excellent Gold Coast day.
10. Catch Some Live Music at a Proper Gold Coast Venue
The Gold Coast live music scene is better than most people expect. Mos Desert Clubhouse in Burleigh Heads is the standout — a beloved local institution with an eclectic lineup, great sound, and the kind of atmosphere that reminds you why live music beats a playlist every time. Check their gig guide and book ahead for weekend shows.
If you're after something a bit more curated, Six-Tricks runs regular live events and themed nights at the distillery in Mermaid Beach — including a Comedy Gala that sells out fast. Worth checking what's on before you visit.
